
Almond Torte w/ Whipped Cream Icing
This is so very simple and quick to make but stunningly delicious!
Ingredients for Torte:
2 tablespoons G/F flour
2 1/2 teaspoons baking powder
4 eggs
3/4 cup sugar
1 cup ground almonds (you can also use ground hazelnuts for a very European flavour or even pecans)
Preheat oven to 350 degrees F. Spray 2 8" round pans. Cut 2 circles out of parchment and line pans. Spray again. Sift dry ingredients and set aside. Blend sugar and eggs. Add ground almonds. Add your dry ingredients all at once and mix well. Divide evenly between your 2 pans and bake for approximately 20 minutes.
Remove from pans and remove paper carefully.
Ingredients for Mocha Whipped Cream Icing:
1/2 cup icing sugar
1/2 cup cocoa
1 tablespoon or so of instant coffee (or my preference of Kahlua)
2 teaspoons vanilla
1 1/2 cup heavy cream (I use the entire 500ml container or 2 cups and it is great)
Dump all ingredients into a food processor and beat until thick ... this is a VERY QUICK PROCESS .. be very vigilant.
You can do this with a hand mixer also but it is still fairly quick.Almond Torte w/ Whipped Cream Icing
